Lemon Ginger Pesto Served with Grilled Vegetables and Tagliatelle

Not only is this pesto magic by itself, but with the grilled vegetables and tagliatelle this dinner rises above most pasta dishes. It´s incredible easy to make and is very versatile. The ingredients couldn’t be any simpler. This simple pesto brings summery flavor to all sorts of dishes. You should definitely add it to your must make list. Every time I served it people ask for the recipe!

It goes well with meat, fish and even shrimps are great options to serve with this dish. If you want to add something extra I usually serve this pesto, vegetables tagliatelle as it is or with grilled chicken.

  1. For the Lemon Ginger Pesto
  2. 3 tbsp olive oil
  3. 1,5 tbsp honey
  4. Juice from 4 pieces of lemon slices
  5. 4 garlic cloves
  6. 3,5 tbsp of rosted pine nuts
  7. 0,8 inches (2 cm) peeled and chopped ginger
  8. 0,55 cup of (100 g) grated parmesan
  9. 1/2 pot of fresh basil
  10. Salt and pepper

  12. 4 persons Pasta-Tagliatelle
  13. 8 oz (200 g) of grilled mixed vegetables in brine ( eggplant, zucchini and red peppers)
  14. 10 Cherry tomatoes cut in half
  1. Prepare the pasta, follow the instructions on the package
  2. For the Lemon Ginger Pesto
  3. Chop the garlic and ginger
  4. In a skillet cook the garlic and ginger in 2 tbsp of olive oil until crispy and golden
  5. Put the nuts in a dry skillet and cook over medium-low heat, stirring frequently, until slightly golden in spots, about 1 minute
  6. Grate the parmesan
  7. With a food blender mix the ginger, garlic, basil, pine nuts and parmesan
  8. Pour in some oil and honey
  9. Squeeze in the lemon juice
  10. Process until pureed
  11. Season with salt and pepper to taste
  12. In a large bowl mix the tagliatelle with the pesto
  13. Cut the cherry tomatoes in half and mix with the pasta and pesto
  14. Drain and add the grilled vegetables (if the vegetables are large, dice them in 1 inch pieces). I use canned grilled vegetables marinated in oil when making this dish.
  1. If you want some meat, grilled chicken are a perfect choice for this dish! But any meat or fish will be as equally good.
