This is one of my all time favorite sandwiches. A long time ago in a past life, I used to prepare this lovely spread together with my roommates once a week. Back then nothing was more satisfying than to eat this tasty tuna sandwich for lunch. It offers a lovely mix of creaminess and chunkiness, perfect between two slices of your favorite bread. It´s simple to prepare and ready to be eaten within minutes. I love how the grilled red peppers, corn and onion spark the tuna and brings out the best of all the ingredients. Just a great combination!
Tuna Veggie Sandwich Spread

Ingredients
- 1 can of tuna in water (5 oz, 170 g )
- 1/3 medium sized finely chopped yellow onion
- 1 cup sour cream (about 200 ml, 2 dl)
- 2 tbsp mayo
- 1 tbsp ketchup
- 1/2 cup fresh corn kernels
- 1 whole chopped red grilled pepper in brine (water, wine vinegar, sugar and salt)
- Salt and pepper
- Baguette, toast or any other bread you like
Instructions
- Chop the yellow onion
- In a medium sized bowl combine the sour cream, mayo and ketchup
- Stir in the onion
- Drain the corn and tuna and add to the sour cream mixture
- Drain and chop the peppers and add to the sour cream mixture
- Season with salt and pepper
- Spread tuna mixture on toast or bread slice, and top with another toast or bread slice
