This is one of my all time favorite sandwiches. A long time ago in a past life, I used to prepare this lovely spread together with my roommates once a week. Back then nothing was more satisfying than to eat this tasty tuna sandwich for lunch. It offers a lovely mix of creaminess and chunkiness, perfect between two slices of your favorite bread. It´s simple to prepare and ready to be eaten within minutes. I love how the grilled red peppers, corn and onion spark the tuna and brings out the best of all the ingredients. Just a great combination!

Ingredients
  1. 1 can of tuna in water (5 oz, 170 g )
  2. 1/3 medium sized finely chopped yellow onion
  3. 1 cup sour cream (about 200 ml, 2 dl)
  4. 2 tbsp mayo
  5. 1 tbsp ketchup
  6. 1/2 cup fresh corn kernels
  7. 1 whole chopped red grilled pepper in brine (water, wine vinegar, sugar and salt)
  8. Salt and pepper
  9. Baguette, toast or any other bread you like
Instructions
  1. Chop the yellow onion
  2. In a medium sized bowl combine the sour cream, mayo and ketchup
  3. Stir in the onion
  4. Drain the corn and tuna and add to the sour cream mixture
  5. Drain and chop the peppers and add to the sour cream mixture
  6. Season with salt and pepper
  7. Spread tuna mixture on toast or bread slice, and top with another toast or bread slice
