Delicious Almond Flake Cookies With Raspberry Balsamic Vinegar Sauce – Sandwich Style, Served With Vanilla Ice cream

My mother use to make these cookies when I was a child. I just made an updated version and made them ”sandwich style” served with vanilla ice cream and raspberry vinegar sauce. With a delightful balance of crispy, caramel almond flake cookies, vanilla ice cream and vinegar raspberry sauce this dessert is heavenly and will seriously knock your socks off. A perfect dessert for 4th of July!

Ingredients
  1. Almond flake cookies
  2. 1/2 cup (100 ml, 1 dl) Flaked almonds
  3. 3,5 tbsp (50 g) Butter
  4. 3,5 tbsp Sugar
  5. 1 tbsp Honey
  6. 3 tbsp Almond flour
  7. Raspberry Vinegar Sauce
  8. 3/4 ( about 200 ml, 2 dl) Frozen raspberries
  9. 3 tbsp Sugar
  10. 2 tsp Balsamic Vinegar
Instructions
  1. Preheat the oven to 390 Fahrenheit (200 Celsius)
  2. In a saucepan melt the butter
  3. Stir in the almond flour, sugar and honey
  4. Let boil while, stirring constantly for 1 minute
  5. Stir in the almond flakes
  6. Line 1-2 baking sheets with parchment paper or use a non-stick muffin pan or similar.
  7. With a tablespoon click the batter thinly on the baking paper (approx. 3-4 cookies on each baking sheets.) or in the muffin pan. I made my cookies in a non-stick small quiche/tart pan
  8. Bake cookies in middle of oven until barely browned and moist in center, 10 to 15 minutes
  9. Cool 5 minutes on sheet
  10. Loosen the cookies with a spatula and transfer to a rack for required cooling
  11. Raspberry Vinegar Sauce
  12. Place frozen raspberries, sugar and vinegar into a sauce pan. Stir to combine.
  13. Heat over medium heat until bubbling.
  14. Reduce heat and let simmer for a few minutes
  15. Crush raspberries with a spoon until pureed
  16. Assemble the sandwich
  17. Place half of the cookies face down
  18. Place one piece of ice cream on each of the cookies
  19. Add some raspberry vinegar sauce on top of the ice cream
  20. Top with remaining cookies
  21. Garnish with fresh blueberries, raspberries and serve
Notes
  1. If you can´t find almond flour you can always make it yourself, super easy!
  2. Peel the almonds or buy already peeled blanched almonds
  3. Place the almonds inside a food processor and pulse until you get a fine, grainy consistency.
