Carrot Burgers With Creamy Lemon Yogurt Dressing

If you’re eager to serve something ”traditional” for your 4th of July celebration but still want an innovative touch I present a new take on burgers! These burgers are mildly sweet, juicy and super crispy. This wonderful meatless dish is both tasty and healthy. I serve them on sourdough bun and some fresh lemon yogurt dressing.

Ingredients
  1. 4 hamburger buns, preferably sour dough
  2. Green salad
  3. 1 pound (500 g) of peeled and grated carrots
  4. 2 garlic cloves
  5. 3 tbsp olive oil
  6. 1/5 cup (50 ml, 0,5 dl ) all-purpose flour
  7. 1/5 cup (50 ml, 0,5 dl) dried bread crumbs
  8. 0,5 tbslp sugar
  9. 3 eggs
  10. Salt and pepper
  11. Yoghurt dressing
  12. 1 cup (250 ml, 2,5 dl) Greek yogurt
  13. 0,5 tbsp of lemon juice and 1 tbsp lemon zest (15 ml)
  14. 1 tbsp honey
  15. 1,5 pinch of salt
  16. A handful of cilantro or as much as you like
Instructions
  1. Peel and grate the carrots
  2. In a large skillet heat 3 tablespoons of oil over medium high heat. Stir in the grated carrots and press the garlic (chopped if you like) over the carrots, stir and cook until golden
  3. In a bowl add the flour, dried bread crumbs, sugar, a pinch of salt and black pepper and mix
  4. Stir in the eggs, one after the other and whisk until all combined
  5. Stir in the carrots
  6. Let rest and swallow a few minutes, while you prepare the yogurt dressing
  7. Heat 2-3 tablespoons olive oil in a large non-stick skillet over high heat, reduce the heat after 1 minute and cook the carrot burgers over medium heat
  8. I made my burgers about 3,5 inches (10 x 10 cm) and 0,5 inches (1 cm) thick
  9. Grill the bread in the oven or in the skillet a few minutes before serving
  10. Yogurt dressing
  11. In a small bowl mix together yogurt, lemon zest, lemon juice, salt, pepper, honey and cilantro
  12. Mix all ingredient
Notes
  1. I served the burgers on buns with lettuce, yogurt dressing and cheese. Enjoy!
